Scientists just discovered a way to cook rice that could halve the calories

According to a study from Sri Lanka, adding coconut oil and letting the rice cool for a few hours could halve the rice's caloric count. The resistant starches developed from this process naturally have less calories than digestible starches, which are typically found after cooking.
