Spinach
Spring is a great time to lighten up, and with these recipes—rich in nutrients and featuring tender spinach as the headliner—you can't go wrong. Turn any of these into heartier versions by adding grilled fish, seafood, or chicken.

Spinach, Mushroom, and Mozzarella Omelet
Omelets are a satisfying source of protein, and, paired with cheese and spinach, a perfect meal or snack. Try one on a toasted baguette for a delicious sandwich. For light and tender eggs, whisk vigorously but cook on a low flame. Top with your favorite garden herbs and serve with a salad of tender lettuces.

Bow Tie Pasta with Spinach, Tomato, and Olives
Good hot or as a cold salad, this pasta dish, which includes capers and garlic, is reminiscent of easy suppers in the Mediterranean. Add anchovies, grilled fish, or chicken for a nonvegetarian version; serve with a chilled rosé or cool Pinot Noir.

Grapefruit Spinach Salad with Creamy Dressing
Bright citrus notes and spinach pair so well with the rich tang of yogurt. Add lemon zest and fresh basil leaves for a light garnish or top with grilled chicken or a flaky white fish. This dish would be excellent with a crisp white Sancerre or Spanish Albariño.

Spinach-Avocado Caesar Salad
Fresh spinach leaves make for a nice folate-rich twist on the classic Caesar and can be the basis for a variety of toppings. Top with a poached egg and crisp pancetta; roasted tomatoes with garlic and shallots; or grilled fish with tapenade stirred into the dressing.
